100% Malbec (aka Auxerrois in local parlance). Au Cerisier comes from a single 1.2-hectare plot next door to a cherry orchard, hence the name of the bottling. The certified-organic vines average 40 years old and are planted on red and yellow clay over limestone bedrock. The hand-harvested fruit is destemmed, pressed and fermented with native yeasts with a one-week maceration. The wine is aged in cement tank for a year.
